Method
1. Combine all ingredients, mix slow for 1 minute then quick for 2 minutes.
2. Scrape down the mixture then mix slow for 1 minute.
3. Remove the dough and rest for 10-15 minutes.
4. Scale to 40g and roll into balls.
5. Bake at 190_ for 35 minutes, apply steam after the first 5 minutes and again after 10 minutes.
