Overview
A convenient method for producing soft and chewy potato bread. Just mix in 42.5% of flour weight.
1. Combine all ingredients except for margarine, mix slow for 2 minutes then fast for 3 minutes.
2. Add margarine and mix for 2 minutes on slow speed then 4 minutes on fast speed or until dough has fully developed.
3. Remove the dough and rest for 5 minutes.
4. Scale to 40g, and place in a prover for 90 minutes.
5. Remove from prover and allow to skin over. Then brush with a gloss or egg wash.
6. Bake at 170_, for 18-20 minutes.
