Method

1. Combine all ingredients, mix for 15-17 minutes to allow the gluten to expand fully.
2. Cover the dough and rest for 5-10 minutes.
3. Apply to round moulds, cover and rest for 10 minutes.
4. Arrange dough pieces onto a tray lined with a plastic sheet and place in a refrigerator for 2 hours or overnight.
5. Remove dough from refrigerator and cut into donut shapes.
6. On a wire rack, place donuts into a prover set to 38_ and 75% humidity for 40 minutes.
7. Remove from prover and allow to dry for 20 minutes.
8. Fry at 180_ or until golden brown.
